4th Of July Lite Deviled Eggs

Happy 4th of July! Add these Lite Deviled Eggs to your menu. Enjoy!

6 hard boiled eggs, peeled and cut lengthwise 1/4 cup plain Greek yogurt 2 tsp Dijon mustard 1/4 tsp pepper 1/4 tsp turmeric 1/8 tsp salt paprika to garnish

Place eggs in a pot, add enough cold water to fully cover, turn heat on high, add a dash of salt. Cover and bring to a boil, then turn off the heat and let sit, still covered, for 12 minutes. Rinse eggs with cold water and let them sit to cool down. When cool, peel and cut lengthwise.

Place the whites on a plate and the yolks in a bowl. Add the remaining ingredients (except for the paprika) to the yolks in the bowl, mash it all together. If you would like the mixture to be smooth, use a blender.

When texture is uniform, spoon mixture into empty egg whites, top with a sprinkle of paprika. Enjoy as a snack or for a party.
