Salsa Sloppy Joe's
1 lb. ground turkey 1 medium yellow onion chopped 2 cloves garlic minced 1 cup chopped zucchini 1 cup chopped yellow squash 1 cup sliced fresh mushrooms 1 medium green pepper chopped 1 16 oz jar salsa 1 tsp. dried basil crushed ½ tsp. dried rosemary crushed 6-8 whole wheat Kaiser rolls, split and toasted
In large skillet cook meat, onion, and garlic over medium heat until meat is brown, drain. Stir in zucchini, yellow squash, mushrooms, and green pepper. Cook covered over low heat for 5-7 minutes or until vegetables are tender. Stir in salsa, basil and rosemary. Bring to boil, reduce heat, simmer uncovered for 10 minutes or until most liquid has evaporated. Serve on toasted rolls. 6-8 servings.
